Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • White fish fillets (such as cod or haddock) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper (any color) - 1 medium, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, bring 250 ml of water to a boil. Once boiling, add a pinch of salt and the couscous. Stir, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
  3. Add the diced bell pepper, zucchini, carrot, and tomato to the skillet. Stir and cook for another 5-7 minutes until the vegetables are tender.
  4. Sprinkle in the cumin, paprika, coriander, salt, and black pepper. Stir well to combine the spices with the vegetables.
  5. Push the vegetable mixture to one side of the skillet and place the fish fillets in the pan. Cook for about 3-4 minutes on each side until the fish is cooked through and flakes easily with a fork.
  6. To serve, place a portion of couscous on each plate, top with the vegetable and fish mixture, and garnish with fresh parsley.
