Ingredients

  • Gluten-free couscous - 150 grams
  • Lamb shoulder, diced - 300 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Tomato, chopped - 1 medium
  • Chickpeas, canned - 200 grams, drained and rinsed
  • Chicken or vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro, chopped - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  2. Add the diced lamb to the pot and brown the meat on all sides for about 5-7 minutes.
  3. Stir in the diced carrot, zucchini, and chopped tomato. Cook for another 5 minutes, allowing the vegetables to soften.
  4. Add the chickpeas, chicken or vegetable broth, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes, or until the lamb is tender.
  5. While the lamb is cooking, prepare the gluten-free couscous according to package instructions, using the remaining broth or water.
  6. Once the lamb is tender, taste and adjust seasoning if necessary. Serve the lamb and vegetable mixture over the couscous, garnished with fresh cilantro.
