Ingredients

  • Couscous - 150 grams
  • Chicken thighs, boneless and skinless - 250 grams
  • Carrot, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Chickpeas, canned, drained - 100 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Chicken broth - 300 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - for garnish

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Add the chicken thighs to the pan, seasoning with salt, black pepper, cumin, cinnamon, and paprika. Cook until the chicken is browned on all sides, about 5-7 minutes.
  3. Stir in the diced carrot, zucchini, and red bell pepper. Sauté for another 5 minutes, allowing the vegetables to soften slightly.
  4. Pour in the chicken broth and bring the mixture to a gentle simmer. Cover the pan and let it cook for about 15 minutes, until the chicken is cooked through and the vegetables are tender.
  5. While the chicken and vegetables are cooking, prepare the couscous. In a separate bowl, combine the couscous with a pinch of salt. Pour 250 ml of boiling water over the couscous, cover, and let it steam for about 5 minutes.
  6. After 5 minutes, fluff the couscous with a fork and stir in the drained chickpeas.
  7. Once the chicken is ready, serve it over a bed of fluffy couscous, garnished with fresh parsley.
