- Couscous - 150 grams
- Chicken thighs, boneless and skinless - 250 grams
- Carrot, diced - 1 medium
- Zucchini, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Chickpeas, canned, drained - 100 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Chicken broth - 300 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - for garnish
Steps
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the chicken thighs to the pan, seasoning with salt, black pepper, cumin, cinnamon, and paprika. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Stir in the diced carrot, zucchini, and red bell pepper. Sauté for another 5 minutes, allowing the vegetables to soften slightly.
- Pour in the chicken broth and bring the mixture to a gentle simmer. Cover the pan and let it cook for about 15 minutes, until the chicken is cooked through and the vegetables are tender.
- While the chicken and vegetables are cooking, prepare the couscous. In a separate bowl, combine the couscous with a pinch of salt. Pour 250 ml of boiling water over the couscous, cover, and let it steam for about 5 minutes.
- After 5 minutes, fluff the couscous with a fork and stir in the drained chickpeas.
- Once the chicken is ready, serve it over a bed of fluffy couscous, garnished with fresh parsley.
