- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the diced red bell pepper and tomato, cooking for an additional 5 minutes until they begin to soften.
- Stir in the ground cumin, coriander, and paprika, cooking for 1 minute to release the spices' aromas.
- Pour in the fish or seafood stock and bring to a gentle simmer. Season with salt and black pepper to taste.
- Add the mixed seafood to the simmering broth and cook for about 5-7 minutes until the seafood is cooked through and opaque.
- While the seafood cooks, prepare the gluten-free couscous according to package instructions, usually involving pouring boiling water over it and letting it steam for about 5 minutes.
- Fluff the couscous with a fork and mix in the lemon juice and chopped parsley.
