Ingredients

  • gluten-free couscous - 150 grams
  • shrimp, peeled and deveined - 250 grams
  • olive oil - 2 tablespoons
  • onion, finely chopped - 1 medium
  • garlic, minced - 2 cloves
  • bell pepper, diced - 1 medium
  • zucchini, diced - 1 small
  • carrot, diced - 1 medium
  • tomato, chopped - 1 medium
  • cumin powder - 1 teaspoon
  • paprika - 1 teaspoon
  • cinnamon - 1/2 teaspoon
  • salt - to taste
  • black pepper - to taste
  • fresh parsley, chopped - 2 tablespoons
  • lemon juice - 1 tablespoon
  • vegetable broth - 300 milliliters

Steps

  1. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced bell pepper, zucchini, and carrot, and sauté for an additional 5 minutes until the vegetables begin to soften.
  3. Stir in the chopped tomato, cumin, paprika, cinnamon, salt, and black pepper. Cook for another 3-4 minutes to blend the flavors.
  4. Add the shrimp to the vegetable mixture and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat and set aside.
  5. In a separate pot, bring the vegetable broth to a boil. Once boiling, add the gluten-free couscous, cover, and remove from heat. Let it sit for 5 minutes.
  6. Fluff the couscous with a fork and stir in the remaining tablespoon of olive oil, fresh parsley, and lemon juice.
  7. To serve, place a generous portion of couscous on each plate and top with the shrimp and vegetable mixture.
