- gluten-free couscous - 150 grams
- shrimp, peeled and deveined - 250 grams
- olive oil - 2 tablespoons
- onion, finely chopped - 1 medium
- garlic, minced - 2 cloves
- bell pepper, diced - 1 medium
- zucchini, diced - 1 small
- carrot, diced - 1 medium
- tomato, chopped - 1 medium
- cumin powder - 1 teaspoon
- paprika - 1 teaspoon
- cinnamon - 1/2 teaspoon
- salt - to taste
- black pepper - to taste
- fresh parsley, chopped - 2 tablespoons
- lemon juice - 1 tablespoon
- vegetable broth - 300 milliliters
Steps
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced bell pepper, zucchini, and carrot, and sauté for an additional 5 minutes until the vegetables begin to soften.
- Stir in the chopped tomato, cumin, paprika, cinnamon, salt, and black pepper. Cook for another 3-4 minutes to blend the flavors.
- Add the shrimp to the vegetable mixture and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat and set aside.
- In a separate pot, bring the vegetable broth to a boil. Once boiling, add the gluten-free couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and stir in the remaining tablespoon of olive oil, fresh parsley, and lemon juice.
- To serve, place a generous portion of couscous on each plate and top with the shrimp and vegetable mixture.
