Ingredients

  • Couscous - 100 grams
  • Water - 150 milliliters
  • Chickpeas (canned, drained) - 100 grams
  • Red onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced

Steps

  1. In a saucepan, bring 150 milliliters of water to a boil, then add 100 grams of couscous. Remove from heat, cover, and let it sit for 5 minutes until the water is absorbed. Fluff with a fork.
  2. In a large bowl, mash 100 grams of drained chickpeas with a fork until slightly chunky. Add the prepared couscous, 50 grams of finely chopped red onion, 1 minced garlic clove, 2 tablespoons of chopped parsley, 1 teaspoon of cumin, 1 teaspoon of coriander, 1/2 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Mix well.
  3. Add 1 large egg and 50 grams of breadcrumbs to the mixture and combine until it forms a cohesive dough. If the mixture is too wet, add more breadcrumbs as needed.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. In a skillet, heat 2 tablespoons of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. Toast the burger buns lightly on the skillet. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the couscous patty, slices of tomato, and cucumber. Top with the other half of the bun and serve.
