- Couscous - 150 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Chickpeas - 100 grams, cooked or canned, drained
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
- Fresh parsley - a handful, chopped
Steps
- In a medium saucepan, bring 250 ml of water to a boil. Once boiling, remove from heat and stir in the couscous, cover, and let it sit for 5 minutes.
- While the couscous is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
- Add the diced carrot, zucchini, and bell pepper to the skillet. Cook for 5-7 minutes until the vegetables are tender.
- Stir in the cooked chickpeas, cumin, paprika, cinnamon, salt, and pepper. Cook for another 2-3 minutes to combine the flavors.
- Fluff the couscous with a fork and add it to the skillet with the vegetables. Mix well to combine all ingredients.
- Remove from heat and stir in the chopped parsley before serving.
