Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • Olive oil - 2 tablespoons
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Chickpeas - 100 grams, cooked or canned, drained
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - a handful, chopped

Steps

  1. In a medium saucepan, bring 250 ml of water to a boil. Once boiling, remove from heat and stir in the couscous, cover, and let it sit for 5 minutes.
  2. While the couscous is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
  3. Add the diced carrot, zucchini, and bell pepper to the skillet. Cook for 5-7 minutes until the vegetables are tender.
  4. Stir in the cooked chickpeas, cumin, paprika, cinnamon, salt, and pepper. Cook for another 2-3 minutes to combine the flavors.
  5. Fluff the couscous with a fork and add it to the skillet with the vegetables. Mix well to combine all ingredients.
  6. Remove from heat and stir in the chopped parsley before serving.
