- Couscous - 100 grams
- Chicken broth - 800 milliliters
- Ground cinnamon - 1/2 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Almonds - 30 grams, sliced (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat and add the diced chicken. Cook until browned, about 5 minutes.
- Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot, celery, and red bell pepper, and cook for another 5 minutes until the vegetables begin to soften.
- Add the ground cinnamon, cumin, paprika, salt, and black pepper, stirring well to coat the chicken and vegetables with the spices.
- Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for about 10 minutes.
- Add the couscous to the pot, stirring to combine, and remove from heat. Cover and let sit for 5 minutes to allow the couscous to absorb the broth.
- Stir in the chopped parsley and lemon juice just before serving.
