  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Couscous - 100 grams
  • Chicken broth - 800 milliliters
  • Ground cinnamon - 1/2 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Almonds - 30 grams, sliced (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat and add the diced chicken. Cook until browned, about 5 minutes.
  2. Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrot, celery, and red bell pepper, and cook for another 5 minutes until the vegetables begin to soften.
  4. Add the ground cinnamon, cumin, paprika, salt, and black pepper, stirring well to coat the chicken and vegetables with the spices.
  5. Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for about 10 minutes.
  6. Add the couscous to the pot, stirring to combine, and remove from heat. Cover and let sit for 5 minutes to allow the couscous to absorb the broth.
  7. Stir in the chopped parsley and lemon juice just before serving.
