- Couscous - 150 grams
- Chicken or beef sausages - 250 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams, cooked
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the diced red bell pepper and carrot to the pan, cooking for about 5 minutes until they soften.
- Slice the sausages into bite-sized pieces and add them to the pan. Cook until they are browned on all sides.
- Stir in the diced tomato, ground cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Once simmering, add the cooked chickpeas and couscous, stirring to combine. Cover the pan and remove it from heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid.
- After 5 minutes, fluff the couscous with a fork and stir in the chopped parsley. Serve warm.
