Ingredients

  • Couscous - 150 grams
  • Chicken or beef sausages - 250 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced red bell pepper and carrot to the pan, cooking for about 5 minutes until they soften.
  3. Slice the sausages into bite-sized pieces and add them to the pan. Cook until they are browned on all sides.
  4. Stir in the diced tomato, ground cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes, allowing the flavors to meld.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Once simmering, add the cooked chickpeas and couscous, stirring to combine. Cover the pan and remove it from heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid.
  7. After 5 minutes, fluff the couscous with a fork and stir in the chopped parsley. Serve warm.
