Ingredients

  • Couscous - 150 grams
  • Water - 200 ml
  • Raisins - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Chopped almonds - 30 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small saucepan, bring 200 ml of water to a boil and add 1/2 teaspoon of salt.
  2. Once boiling, remove from heat and stir in 150 grams of couscous. Cover and let sit for 5 minutes to allow the couscous to absorb the water.
  3. In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add 50 grams of raisins and sauté for 2-3 minutes until plump.
  4. Add 1/2 teaspoon of ground cinnamon and 1/2 teaspoon of ground cumin to the raisins, stirring to combine.
  5. Fluff the couscous with a fork, then add the raisin mixture and 30 grams of chopped almonds. Mix until evenly combined.
  6. Garnish with 2 tablespoons of chopped fresh parsley before serving.
