- Couscous - 150 grams
- Water - 200 ml
- Raisins - 50 grams
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Chopped almonds - 30 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a small saucepan, bring 200 ml of water to a boil and add 1/2 teaspoon of salt.
- Once boiling, remove from heat and stir in 150 grams of couscous. Cover and let sit for 5 minutes to allow the couscous to absorb the water.
- In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add 50 grams of raisins and sauté for 2-3 minutes until plump.
- Add 1/2 teaspoon of ground cinnamon and 1/2 teaspoon of ground cumin to the raisins, stirring to combine.
- Fluff the couscous with a fork, then add the raisin mixture and 30 grams of chopped almonds. Mix until evenly combined.
- Garnish with 2 tablespoons of chopped fresh parsley before serving.
