  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the chicken thighs, cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook until the chicken is browned on all sides, about 8-10 minutes.
  4. Stir in the diced carrot and zucchini, and pour in the chicken broth. Bring to a simmer and cover the skillet. Cook for 20 minutes or until the chicken is cooked through.
  5. Meanwhile, prepare the couscous according to package instructions, typically mixing it with hot water (or broth) and letting it steam for about 5 minutes.
  6. Once the chicken is ready, shred it into bite-sized pieces and stir it back into the sauce with the vegetables.
  7. Fluff the couscous with a fork and serve it topped with the chicken and vegetable mixture. Garnish with fresh parsley.
