- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced

- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the chicken thighs, cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook until the chicken is browned on all sides, about 8-10 minutes.
- Stir in the diced carrot and zucchini, and pour in the chicken broth. Bring to a simmer and cover the skillet. Cook for 20 minutes or until the chicken is cooked through.
- Meanwhile, prepare the couscous according to package instructions, typically mixing it with hot water (or broth) and letting it steam for about 5 minutes.
- Once the chicken is ready, shred it into bite-sized pieces and stir it back into the sauce with the vegetables.
- Fluff the couscous with a fork and serve it topped with the chicken and vegetable mixture. Garnish with fresh parsley.
