- Couscous - 150 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Rock fish (such as grouper or snapper) - 300 grams, filleted
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Tomatoes - 2 medium, diced
- Bell pepper - 1 medium, chopped
- Carrot - 1 medium, diced
- Cilantro - 1/4 cup, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
- Fish stock or water - 100 ml
Steps
- In a medium saucepan, bring 250 ml of water to a boil and add a pinch of salt. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced tomatoes, chopped bell pepper, and diced carrot to the skillet. Cook for about 5 minutes until the vegetables are tender.
- Stir in the paprika, cumin, salt, and black pepper. Mix well and cook for an additional 2 minutes.
- Add the fish stock (or water) and bring to a gentle simmer. Carefully place the fish fillets on top of the vegetable mixture, cover, and let cook for about 8-10 minutes until the fish is cooked through and flakes easily.
- Once the fish is done, squeeze the juice of one lemon over the mixture and sprinkle with chopped cilantro.
- To serve, place a generous scoop of couscous on each plate and top with the fish and vegetable mixture. Enjoy!
