- Fish stock or water - 300 ml

- Paprika - 1 teaspoon
- Coriander powder - 1/2 teaspoon

- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced red bell pepper and zucchini to the pan, cooking for about 5 minutes until softened.
- Stir in the diced tomato, cumin, paprika, coriander powder, salt, and black pepper. Cook for another 2 minutes.
- Add the fish chunks to the vegetable mixture and pour in the fish stock or water. Bring to a gentle simmer and cook for about 10 minutes, or until the fish is cooked through.
- While the fish is cooking, prepare the gluten-free couscous according to package instructions, usually involving boiling water and letting it sit covered for about 5 minutes.
