  • Fish fillets (cod or haddock) - 300 grams, cut into chunks
  • Fish stock or water - 300 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the diced red bell pepper and zucchini to the pan, cooking for about 5 minutes until softened.
  3. Stir in the diced tomato, cumin, paprika, coriander powder, salt, and black pepper. Cook for another 2 minutes.
  4. Add the fish chunks to the vegetable mixture and pour in the fish stock or water. Bring to a gentle simmer and cook for about 10 minutes, or until the fish is cooked through.
  5. While the fish is cooking, prepare the gluten-free couscous according to package instructions, usually involving boiling water and letting it sit covered for about 5 minutes.
  6. Once the couscous is ready, fluff it with a fork and drizzle with the remaining olive oil.
  7. To serve, place a portion of couscous on each plate, top with the fish and vegetable mixture, and garnish with fresh parsley.
