- canned chickpeas - 200 grams, drained and rinsed
- vegetable broth - 250 ml
- olive oil - 2 tablespoons
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- carrot - 1 medium, diced
- zucchini - 1 medium, diced
- bell pepper - 1 medium, diced
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- paprika - 1 teaspoon
- salt - to taste
- black pepper - to taste
- fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until softened, about 3-4 minutes.
- Add the diced carrot, zucchini, and bell pepper to the pan. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the drained chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 3-4 minutes, allowing the spices to blend with the vegetables.
- Pour in the vegetable broth and bring to a simmer. Once simmering, reduce the heat to low and let it cook for 5 minutes.
- In a separate bowl, combine the gluten-free couscous with the remaining tablespoon of olive oil. Pour the hot vegetable broth mixture over the couscous, cover with a lid, and let it sit for about 5 minutes.
- After 5 minutes, fluff the couscous with a fork and mix in the vegetable and chickpea mixture gently.
- Serve warm, garnished with fresh parsley.
