  • couscous - 150 grams (gluten-free)
  • canned chickpeas - 200 grams, drained and rinsed
  • vegetable broth - 250 ml
  • olive oil - 2 tablespoons
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • carrot - 1 medium, diced
  • zucchini - 1 medium, diced
  • bell pepper - 1 medium, diced
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - to taste
  • black pepper - to taste
  • fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until softened, about 3-4 minutes.
  2. Add the diced carrot, zucchini, and bell pepper to the pan. Cook for about 5-7 minutes until the vegetables are tender.
  3. Stir in the drained chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 3-4 minutes, allowing the spices to blend with the vegetables.
  4. Pour in the vegetable broth and bring to a simmer. Once simmering, reduce the heat to low and let it cook for 5 minutes.
  5. In a separate bowl, combine the gluten-free couscous with the remaining tablespoon of olive oil. Pour the hot vegetable broth mixture over the couscous, cover with a lid, and let it sit for about 5 minutes.
  6. After 5 minutes, fluff the couscous with a fork and mix in the vegetable and chickpea mixture gently.
  7. Serve warm, garnished with fresh parsley.
