  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent, about 5 minutes.
  2. Stir in the cumin and coriander powders, salt, and black pepper, cooking for another 1-2 minutes until fragrant.
  3. Add the green peas and water to the pot, bringing it to a gentle boil.
  4. Once boiling, reduce the heat to low and add the couscous. Stir once, then cover the pot and remove it from heat. Let it sit for 10 minutes to allow the couscous to absorb the water.
  5. After 10 minutes, fluff the couscous with a fork and add the chopped parsley and lemon juice, mixing well to combine.
