- Coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Almonds - 30 grams, toasted and chopped
- Raisins - 30 grams, optional
Steps
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, salt, and black pepper to the onions. Sauté for an additional 2 minutes until fragrant.
- Pour in the vegetable broth and bring to a boil. Once boiling, add the couscous, stir briefly, then cover the saucepan and remove it from heat. Let it sit for about 5 minutes to allow the couscous to absorb the broth.
- While the couscous is resting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes.
- Fluff the couscous with a fork and then gently fold in the sautéed spinach, lemon juice, chopped almonds, and raisins if using.
- Serve warm, garnished with extra almonds and a drizzle of olive oil if desired.
