Ingredients

  • Couscous - 150 grams
  • Vegetable broth - 250 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Bell pepper - 1 small, diced
  • Raisins - 50 grams
  • Chickpeas - 100 grams, canned and drained
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes.
  2. Add the diced carrot, zucchini, and bell pepper to the pan. Cook for an additional 5-7 minutes, stirring occasionally until the vegetables are tender.
  3. Stir in the ground cumin, coriander, cinnamon, turmeric, salt, and black pepper. Cook for 1-2 minutes until the spices are fragrant.
  4. Add the rinsed chickpeas and raisins to the vegetable mixture, stirring to combine. Pour in the vegetable broth and bring to a simmer.
  5. Once the broth is simmering, remove the pan from heat. Stir in the couscous, cover, and let it sit for about 5 minutes until the couscous absorbs the liquid.
  6. Fluff the couscous with a fork, adding the remaining tablespoon of olive oil. Adjust seasoning if necessary.
  7. Serve warm, garnished with fresh cilantro.
