- Vegetable broth - 250 milliliters

- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Bell pepper - 1 small, diced
- Raisins - 50 grams
- Chickpeas - 100 grams, canned and drained
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes.
- Add the diced carrot, zucchini, and bell pepper to the pan. Cook for an additional 5-7 minutes, stirring occasionally until the vegetables are tender.
- Stir in the ground cumin, coriander, cinnamon, turmeric, salt, and black pepper. Cook for 1-2 minutes until the spices are fragrant.
- Add the rinsed chickpeas and raisins to the vegetable mixture, stirring to combine. Pour in the vegetable broth and bring to a simmer.
- Once the broth is simmering, remove the pan from heat. Stir in the couscous, cover, and let it sit for about 5 minutes until the couscous absorbs the liquid.
- Fluff the couscous with a fork, adding the remaining tablespoon of olive oil. Adjust seasoning if necessary.
- Serve warm, garnished with fresh cilantro.
