- Couscous - 150 g
- Water - 200 ml
- Olive oil - 2 tablespoons
- Green olives, pitted and sliced - 100 g
- Black olives, pitted and sliced - 50 g
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 medium
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a saucepan, bring 200 ml of water to a boil. Once boiling, add a pinch of salt and the couscous, stirring gently. Remove from heat, cover, and let it sit for 5 minutes.
- While the couscous is resting, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for another 2 minutes, stirring frequently to prevent burning.
- Stir in the sliced green and black olives, and cook for an additional 3 minutes to warm through.
- Fluff the couscous with a fork, then add it to the skillet with the olive mixture. Stir well to combine all ingredients.
- Remove from heat and add chopped parsley and lemon juice. Mix until evenly distributed.
- Serve warm, garnished with additional parsley if desired.
