Ingredients

  • Couscous - 150 g
  • Water - 200 ml
  • Olive oil - 2 tablespoons
  • Green olives, pitted and sliced - 100 g
  • Black olives, pitted and sliced - 50 g
  • Garlic, minced - 2 cloves
  • Onion, finely chopped - 1 medium
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a saucepan, bring 200 ml of water to a boil. Once boiling, add a pinch of salt and the couscous, stirring gently. Remove from heat, cover, and let it sit for 5 minutes.
  2. While the couscous is resting, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for another 2 minutes, stirring frequently to prevent burning.
  4. Stir in the sliced green and black olives, and cook for an additional 3 minutes to warm through.
  5. Fluff the couscous with a fork, then add it to the skillet with the olive mixture. Stir well to combine all ingredients.
  6. Remove from heat and add chopped parsley and lemon juice. Mix until evenly distributed.
  7. Serve warm, garnished with additional parsley if desired.
