- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped for garnish
Steps
- Peel the turnips and cut them into small cubes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the turnip cubes, cumin, coriander, paprika, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 10-15 minutes, or until the turnips are tender.
- While the turnips are cooking, prepare the couscous. In a separate bowl, add the couscous and pour boiling water (or additional vegetable broth) over it, covering it with a lid. Let it sit for about 5-7 minutes until the liquid is absorbed.
- Fluff the couscous with a fork and season with a pinch of salt if desired.
- Serve the couscous on a plate, topped with the turnip mixture, and garnish with fresh parsley.
