- Vegetable broth - 300 milliliters
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 4-5 minutes.
- Add the diced red bell pepper, zucchini, and carrot to the saucepan. Cook for an additional 5-7 minutes until the vegetables are slightly tender.
- In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the merguez sausages and cook until browned and cooked through, about 8-10 minutes. Remove from heat and slice the sausages into bite-sized pieces.
- Pour the vegetable broth into the saucepan with the vegetables. Stir in cumin, paprika, salt, and black pepper. Bring to a simmer.
- Once the broth is simmering, stir in the couscous. Remove from heat, cover, and let it sit for 5 minutes to allow the couscous to absorb the broth.
- Fluff the couscous with a fork and gently mix in the sliced merguez sausages. Adjust seasoning if necessary.
- Serve hot, garnished with freshly chopped parsley.
