  • Merguez sausages - 200 grams

  • Carrot - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 milliliters
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 4-5 minutes.
  2. Add the diced red bell pepper, zucchini, and carrot to the saucepan. Cook for an additional 5-7 minutes until the vegetables are slightly tender.
  3. In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the merguez sausages and cook until browned and cooked through, about 8-10 minutes. Remove from heat and slice the sausages into bite-sized pieces.
  4. Pour the vegetable broth into the saucepan with the vegetables. Stir in cumin, paprika, salt, and black pepper. Bring to a simmer.
  5. Once the broth is simmering, stir in the couscous. Remove from heat, cover, and let it sit for 5 minutes to allow the couscous to absorb the broth.
  6. Fluff the couscous with a fork and gently mix in the sliced merguez sausages. Adjust seasoning if necessary.
  7. Serve hot, garnished with freshly chopped parsley.
