- Couscous - 150 grams
- Water - 250 ml
- Zucchini - 1 medium, diced
- Bell pepper (red or yellow) - 1 medium, diced
- Carrot - 1 medium, diced
- Red onion - 1 small, diced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped (for garnish)
Steps
- Preheat the grill or grill pan over medium-high heat.
- In a large bowl, combine the diced zucchini, bell pepper, carrot, and red onion.
- Drizzle the vegetables with olive oil and sprinkle with cumin, coriander, paprika, salt, and black pepper. Toss well to coat.
- Place the seasoned vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
- While the vegetables are grilling, bring 250 ml of water to a boil in a saucepan.
- Once boiling, stir in the couscous, cover the pan, and remove it from heat. Let it sit for 5 minutes to allow the couscous to absorb the water.
- Fluff the couscous with a fork and season with a pinch of salt if needed.
- Serve the grilled vegetables over a bed of couscous, garnished with chopped parsley.
