Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Carrot - 1 medium, diced
  • Red onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped (for garnish)

Steps

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a large bowl, combine the diced zucchini, bell pepper, carrot, and red onion.
  3. Drizzle the vegetables with olive oil and sprinkle with cumin, coriander, paprika, salt, and black pepper. Toss well to coat.
  4. Place the seasoned vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
  5. While the vegetables are grilling, bring 250 ml of water to a boil in a saucepan.
  6. Once boiling, stir in the couscous, cover the pan, and remove it from heat. Let it sit for 5 minutes to allow the couscous to absorb the water.
  7. Fluff the couscous with a fork and season with a pinch of salt if needed.
  8. Serve the grilled vegetables over a bed of couscous, garnished with chopped parsley.
