  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1/2, diced

Steps

  1. In a medium saucepan, bring 300 ml of water to a boil. Add 1/2 teaspoon of salt and 150 grams of gluten-free couscous.
  2. Remove the saucepan from heat, cover it, and let it sit for about 5 minutes until the couscous absorbs the water.
  3. Fluff the couscous with a fork and drizzle in 2 tablespoons of olive oil. Mix well.
  4. In a mixing bowl, combine chopped parsley, cilantro, mint, minced garlic, ground cumin, lemon juice, black pepper, diced cucumber, and halved cherry tomatoes.
  5. Gently fold the herb mixture into the fluffed couscous until well combined.
  6. Serve warm or at room temperature, garnished with additional herbs if desired.
