- Fresh cilantro - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1/2, diced
Steps
- In a medium saucepan, bring 300 ml of water to a boil. Add 1/2 teaspoon of salt and 150 grams of gluten-free couscous.
- Remove the saucepan from heat, cover it, and let it sit for about 5 minutes until the couscous absorbs the water.
- Fluff the couscous with a fork and drizzle in 2 tablespoons of olive oil. Mix well.
- In a mixing bowl, combine chopped parsley, cilantro, mint, minced garlic, ground cumin, lemon juice, black pepper, diced cucumber, and halved cherry tomatoes.
- Gently fold the herb mixture into the fluffed couscous until well combined.
- Serve warm or at room temperature, garnished with additional herbs if desired.
