Ingredients

  • Couscous (gluten-free) - 150 grams
  • Water - 250 ml
  • Dried apricots - 50 grams, chopped
  • Raisins - 50 grams
  • Almonds - 30 grams, slivered
  • Walnuts - 30 grams, chopped
  • Honey - 2 tablespoons
  • Cinnamon powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh mint leaves - for garnish

Steps

  1. In a saucepan, bring 250 ml of water to a boil and add 1/4 teaspoon of salt.
  2. Once boiling, remove from heat, add the gluten-free couscous, and cover. Let it sit for about 5 minutes.
  3. In a small skillet, heat the olive oil over medium heat and add the slivered almonds and chopped walnuts. Toast them for about 3-4 minutes until lightly golden.
  4. Fluff the couscous with a fork and add the chopped dried apricots, raisins, toasted nuts, honey, and cinnamon. Mix well to combine.
