  • Cherry tomatoes - 150 grams, halved
  • Shrimp - 200 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Squid - 100 grams, sliced into rings
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, bring 250 ml of water to a boil. Add a pinch of salt, then stir in the couscous. Remove from heat, cover, and let it sit for 5 minutes.
  2. Meanwhile, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet. Sauté for about 5 minutes until the vegetables are tender.
  4. Stir in the halved cherry tomatoes, shrimp, mussels, and squid. Add cumin, paprika, salt, and pepper. Cook for 5-7 minutes until the seafood is cooked through.
  5. Fluff the couscous with a fork and add it to the skillet, mixing well with the seafood and vegetables.
  6. Drizzle the lemon juice over the dish and add chopped cilantro. Stir to combine and adjust seasoning if necessary.
  7. Serve hot, garnished with additional cilantro if desired.
