- Couscous - 150 grams
- Fava beans (fresh or frozen) - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 300 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, paprika, salt, and black pepper to the pot. Stir and cook for another minute until fragrant.
- Pour in the vegetable broth and bring to a boil. Once boiling, add the fava beans and reduce the heat to a simmer. Cook for about 10 minutes until the beans are tender.
- While the beans are cooking, prepare the couscous. In a separate bowl, combine the couscous with a pinch of salt. Pour in 200 ml of boiling water, cover, and let it sit for 5 minutes.
- After 5 minutes, fluff the couscous with a fork, then mix in the freshly chopped parsley and lemon juice.
- Once the fava beans are cooked, serve the beans over a bed of couscous. Drizzle with a little extra olive oil if desired and garnish with more parsley.
