Ingredients

  • Couscous - 150 grams
  • Fava beans (fresh or frozen) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 300 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, paprika, salt, and black pepper to the pot. Stir and cook for another minute until fragrant.
  3. Pour in the vegetable broth and bring to a boil. Once boiling, add the fava beans and reduce the heat to a simmer. Cook for about 10 minutes until the beans are tender.
  4. While the beans are cooking, prepare the couscous. In a separate bowl, combine the couscous with a pinch of salt. Pour in 200 ml of boiling water, cover, and let it sit for 5 minutes.
  5. After 5 minutes, fluff the couscous with a fork, then mix in the freshly chopped parsley and lemon juice.
  6. Once the fava beans are cooked, serve the beans over a bed of couscous. Drizzle with a little extra olive oil if desired and garnish with more parsley.
