- Couscous - 150 grams
- Zucchini - 2 medium (about 250 grams)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced zucchini, cumin, cinnamon, salt, and pepper. Cook for about 5 minutes until the zucchini is slightly tender.
- Pour in the vegetable broth and bring to a boil. Once boiling, add the couscous, stir well, cover the pan, and remove from heat. Let it sit for about 5 minutes.
- After 5 minutes, fluff the couscous with a fork and stir in the remaining tablespoon of olive oil, fresh parsley, and lemon juice.
- Serve warm, garnished with additional parsley if desired.
