Ingredients

  • Couscous - 150 grams
  • Zucchini - 2 medium (about 250 grams)
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the diced zucchini, cumin, cinnamon, salt, and pepper. Cook for about 5 minutes until the zucchini is slightly tender.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, add the couscous, stir well, cover the pan, and remove from heat. Let it sit for about 5 minutes.
  5. After 5 minutes, fluff the couscous with a fork and stir in the remaining tablespoon of olive oil, fresh parsley, and lemon juice.
  6. Serve warm, garnished with additional parsley if desired.
