Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Mixed seafood (mussels, clams, shrimp) - 300 grams
  • Fish stock - 200 ml

Steps

  1. In a pot, bring 250 ml of water to a boil and add a pinch of salt. Once boiling, add the couscous, remove from heat, cover, and let it sit for 5 minutes.
  2. In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until softened and translucent.
  3. Add the diced bell pepper and tomato to the pan, cooking for another 3-4 minutes until the vegetables are tender.
  4. Stir in the paprika, cumin, salt, and black pepper, mixing well to combine the spices with the vegetables.
  5. Add the mixed seafood to the pan and pour in the fish stock. Cover and cook for about 5-7 minutes, or until the seafood is cooked through and the shells have opened.
  6. Fluff the couscous with a fork and stir in the chopped parsley and lemon juice.
  7. Serve the couscous on plates topped with the seafood mixture, ensuring to include some of the broth for added flavor.
