- Couscous - 150 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Mixed seafood (mussels, clams, shrimp) - 300 grams
- Fish stock - 200 ml
Steps
- In a pot, bring 250 ml of water to a boil and add a pinch of salt. Once boiling, add the couscous, remove from heat, cover, and let it sit for 5 minutes.
- In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until softened and translucent.
- Add the diced bell pepper and tomato to the pan, cooking for another 3-4 minutes until the vegetables are tender.
- Stir in the paprika, cumin, salt, and black pepper, mixing well to combine the spices with the vegetables.
- Add the mixed seafood to the pan and pour in the fish stock. Cover and cook for about 5-7 minutes, or until the seafood is cooked through and the shells have opened.
- Fluff the couscous with a fork and stir in the chopped parsley and lemon juice.
- Serve the couscous on plates topped with the seafood mixture, ensuring to include some of the broth for added flavor.
