- Couscous - 150 grams
- Carrots - 2 medium (about 200 grams)
- Onion - 1 small (about 100 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Vegetable broth - 250 milliliters
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Lemon - 1 (for juice)
Steps
- Peel and cut the carrots into thin slices. Finely chop the onion and garlic.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
- Add the sliced carrots to the saucepan and stir for another 5 minutes until they start to soften.
- Pour in the vegetable broth, and add cinnamon, cumin, salt, and black pepper. Bring to a gentle boil, then reduce the heat and cover. Let it simmer for about 10 minutes until the carrots are tender.
- Meanwhile, in a separate bowl, combine the couscous with 200 milliliters of boiling water. Cover and let it sit for 5 minutes, then fluff with a fork.
- Once the carrots are cooked, remove the saucepan from the heat and stir in the chopped parsley and lemon juice.
- Serve the carrot mixture over the fluffed couscous, garnishing with additional parsley if desired.
