Ingredients

  • Couscous - 150 grams
  • Carrots - 2 medium (about 200 grams)
  • Onion - 1 small (about 100 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 milliliters
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon - 1 (for juice)

Steps

  1. Peel and cut the carrots into thin slices. Finely chop the onion and garlic.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
  3. Add the sliced carrots to the saucepan and stir for another 5 minutes until they start to soften.
  4. Pour in the vegetable broth, and add cinnamon, cumin, salt, and black pepper. Bring to a gentle boil, then reduce the heat and cover. Let it simmer for about 10 minutes until the carrots are tender.
  5. Meanwhile, in a separate bowl, combine the couscous with 200 milliliters of boiling water. Cover and let it sit for 5 minutes, then fluff with a fork.
  6. Once the carrots are cooked, remove the saucepan from the heat and stir in the chopped parsley and lemon juice.
  7. Serve the carrot mixture over the fluffed couscous, garnishing with additional parsley if desired.
