  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.
  2. Add the diced carrot and red bell pepper to the saucepan, cooking for another 5 minutes until they begin to soften.
  3. Stir in the cumin, paprika, salt, and black pepper, cooking for 1 minute to release the spices' aromas.
  4. Add the artichoke hearts and vegetable broth to the saucepan. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
  5. While the vegetables are simmering, prepare the couscous in a separate bowl by pouring the hot vegetable broth over it. Cover and let it sit for 5 minutes until the liquid is absorbed.
  6. Fluff the couscous with a fork and stir in the lemon juice and chopped parsley.
  7. Serve the couscous topped with the artichoke and vegetable mixture, garnishing with additional parsley if desired.
