- Onion - 1 small, finely chopped
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.
- Add the diced carrot and red bell pepper to the saucepan, cooking for another 5 minutes until they begin to soften.
- Stir in the cumin, paprika, salt, and black pepper, cooking for 1 minute to release the spices' aromas.
- Add the artichoke hearts and vegetable broth to the saucepan. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
- While the vegetables are simmering, prepare the couscous in a separate bowl by pouring the hot vegetable broth over it. Cover and let it sit for 5 minutes until the liquid is absorbed.
- Fluff the couscous with a fork and stir in the lemon juice and chopped parsley.
- Serve the couscous topped with the artichoke and vegetable mixture, garnishing with additional parsley if desired.
