Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the lamb cubes to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the diced carrot, zucchini, and chopped tomato, cooking for an additional 5 minutes.
- Add the ground cumin, coriander, cinnamon, paprika, salt, and black pepper, stirring to coat the meat and vegetables with the spices.
- Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes, or until the lamb is tender.
- While the lamb is cooking, prepare the couscous according to package instructions, typically by boiling water and mixing in the couscous, then covering and letting it steam for about 5 minutes.
- Fluff the couscous with a fork, and serve it on plates topped with the lamb and vegetable mixture.
