Ingredients

  • Gluten-free couscous - 150 grams
  • Chicken thighs - 300 grams, boneless and skinless
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Chicken broth - 400 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a large pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the diced chicken thighs to the pan, cooking until browned on all sides, about 5-7 minutes.
  3. Stir in the diced carrot, zucchini, and red bell pepper. Cook for an additional 5 minutes until the vegetables begin to soften.
  4. Sprinkle in the cumin, cinnamon, paprika, salt, and black pepper. Mix well to coat the chicken and vegetables with the spices.
  5. Pour in the chicken broth and bring the mixture to a simmer. Cover and cook for 10-12 minutes until the chicken is cooked through.
  6. While the chicken is cooking, prepare the gluten-free couscous according to package instructions, typically involving boiling water and letting it sit covered for 5 minutes.
  7. Once cooked, fluff the couscous with a fork and serve it on plates topped with the chicken and vegetable mixture.
  8. Garnish with fresh cilantro before serving.
