- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Heat olive oil in a large pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced chicken thighs to the pan, cooking until browned on all sides, about 5-7 minutes.
- Stir in the diced carrot, zucchini, and red bell pepper. Cook for an additional 5 minutes until the vegetables begin to soften.
- Sprinkle in the cumin, cinnamon, paprika, salt, and black pepper. Mix well to coat the chicken and vegetables with the spices.
- Pour in the chicken broth and bring the mixture to a simmer. Cover and cook for 10-12 minutes until the chicken is cooked through.
