- Couscous - 100 grams
- Boiling water - 120 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Red onion - 1, sliced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted
Steps
- Preheat the oven to 220°C (428°F).
- Prepare the couscous by placing it in a bowl, adding boiling water and a pinch of salt, then cover and let it sit for 5 minutes before fluffing it with a fork.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and red onion, sautéing until the onion is translucent, about 3 minutes.
- Add the diced red bell pepper and zucchini to the skillet and cook for an additional 5-7 minutes until the vegetables are tender.
- Stir in the cumin, cinnamon, paprika, salt, and black pepper, cooking for another minute before mixing in the fluffed couscous. Remove from heat.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
- Spread the couscous and vegetable mixture evenly over the pizza base, leaving a small border around the edges.
- Sprinkle crumbled feta cheese and toasted pine nuts over the top.
- Drizzle the remaining olive oil over the pizza.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
