Ingredients

  • Pizza dough - 200 grams
  • Couscous - 100 grams
  • Boiling water - 120 ml
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Red onion - 1, sliced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Prepare the couscous by placing it in a bowl, adding boiling water and a pinch of salt, then cover and let it sit for 5 minutes before fluffing it with a fork.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and red onion, sautéing until the onion is translucent, about 3 minutes.
  4. Add the diced red bell pepper and zucchini to the skillet and cook for an additional 5-7 minutes until the vegetables are tender.
  5. Stir in the cumin, cinnamon, paprika, salt, and black pepper, cooking for another minute before mixing in the fluffed couscous. Remove from heat.
  6. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
  7. Spread the couscous and vegetable mixture evenly over the pizza base, leaving a small border around the edges.
  8. Sprinkle crumbled feta cheese and toasted pine nuts over the top.
  9. Drizzle the remaining olive oil over the pizza.
  10. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
  11. Remove from the oven and let it cool for a couple of minutes. Garnish with fresh parsley before slicing and serving.
