Ingredients
- Whole wheat pizza dough - 200 grams
- Couscous - 100 grams
- Vegetable broth - 200 ml
- Red bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 220°C (428°F).
- In a saucepan, bring the vegetable broth to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a bowl, combine sliced red and yellow bell peppers, olive oil, cumin, coriander, smoked paprika, salt, and black pepper. Toss to coat evenly.
- Spread the seasoned bell peppers on a baking sheet and roast in the preheated oven for 15 minutes, or until softened and slightly caramelized.
- While the peppers are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled dough to a pizza stone or baking sheet. Spread the cooked couscous evenly over the base, leaving a small border around the edges.
- Once the peppers are done roasting, remove them from the oven and distribute them evenly over the couscous layer.
- If using, sprinkle vegan cheese over the top.
- Bake the pizza in the oven for 12-15 minutes, or until the crust is golden brown and crispy.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before slicing and serving.
