Ingredients

  • Whole wheat pizza dough - 200 grams
  • Couscous - 100 grams
  • Vegetable broth - 200 ml
  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegan cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a saucepan, bring the vegetable broth to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. In a bowl, combine sliced red and yellow bell peppers, olive oil, cumin, coriander, smoked paprika, salt, and black pepper. Toss to coat evenly.
  4. Spread the seasoned bell peppers on a baking sheet and roast in the preheated oven for 15 minutes, or until softened and slightly caramelized.
  5. While the peppers are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  6. Transfer the rolled dough to a pizza stone or baking sheet. Spread the cooked couscous evenly over the base, leaving a small border around the edges.
  7. Once the peppers are done roasting, remove them from the oven and distribute them evenly over the couscous layer.
  8. If using, sprinkle vegan cheese over the top.
  9. Bake the pizza in the oven for 12-15 minutes, or until the crust is golden brown and crispy.
  10. Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before slicing and serving.
