Ingredients

  • couscous - 100 grams
  • water - 200 ml
  • olive oil - 2 tablespoons
  • all-purpose flour - 150 grams
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • ground cumin - 1/2 teaspoon
  • paprika - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • fresh cilantro - 2 tablespoons, chopped
  • garlic - 1 clove, minced
  • lemon juice - 1 tablespoon
  • black pepper - to taste

Steps

  1. In a small pot, bring 200 ml of water to a boil. Once boiling, add 100 grams of couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. In a mixing bowl, combine 150 grams of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of ground cumin, and 1/2 teaspoon of paprika.
  3. Add the fluffed couscous, 2 tablespoons of olive oil, 2 tablespoons of chopped parsley, 2 tablespoons of chopped cilantro, and 1 minced garlic clove to the flour mixture. Mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 3-5 minutes until smooth and elastic.
  5. Divide the dough into two equal portions and roll each into a flat circle about 1 cm thick.
  6. Preheat a non-stick skillet over medium heat. Cook each flatbread for 3-4 minutes on each side, or until golden brown and cooked through.
  7. Remove from heat and drizzle with 1 tablespoon of lemon juice and season with black pepper to taste before serving.
