- couscous - 100 grams
- canned chickpeas - 1 can (400 grams), drained and rinsed
- red onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- fresh parsley - 30 grams, chopped
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- all-purpose flour - 2 tablespoons
- olive oil - 2 tablespoons (for frying)
- whole grain burger buns - 2
- lettuce leaves - 2
- tomato - 1, sliced
- cucumber - 1/2, sliced
- tahini - 2 tablespoons
- lemon juice - 1 tablespoon
Steps
- Cook the couscous according to package instructions, usually by boiling water and letting it sit covered for 5 minutes, then fluff with a fork.
- In a large bowl, mash the chickpeas using a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked couscous, chopped red onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, and flour to the mashed chickpeas. Mix until well combined.
- Form the mixture into 2 equal-sized patties.
- Heat olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
- In a small bowl, whisk together tahini and lemon juice to make the sauce.
- To assemble the burgers, place a lettuce leaf on each bun, add the chickpea patties, top with sliced tomato and cucumber, and drizzle with tahini sauce.
