Ingredients

  • couscous - 100 grams
  • canned chickpeas - 1 can (400 grams), drained and rinsed
  • red onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • fresh parsley - 30 grams, chopped
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • all-purpose flour - 2 tablespoons
  • olive oil - 2 tablespoons (for frying)
  • whole grain burger buns - 2
  • lettuce leaves - 2
  • tomato - 1, sliced
  • cucumber - 1/2, sliced
  • tahini - 2 tablespoons
  • lemon juice - 1 tablespoon

Steps

  1. Cook the couscous according to package instructions, usually by boiling water and letting it sit covered for 5 minutes, then fluff with a fork.
  2. In a large bowl, mash the chickpeas using a fork or potato masher until mostly smooth, leaving some chunks for texture.
  3. Add the cooked couscous, chopped red onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, and flour to the mashed chickpeas. Mix until well combined.
  4. Form the mixture into 2 equal-sized patties.
  5. Heat olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
  6. In a small bowl, whisk together tahini and lemon juice to make the sauce.
  7. To assemble the burgers, place a lettuce leaf on each bun, add the chickpea patties, top with sliced tomato and cucumber, and drizzle with tahini sauce.
