Ingredients

  • Basmati rice - 100 grams
  • Almond milk - 400 ml
  • Cinnamon stick - 1 piece
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Raisins - 30 grams
  • Chopped almonds - 20 grams
  • Ground cinnamon - 1 teaspoon (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, almond milk, cinnamon stick, and a pinch of salt.
  3. Bring the mixture to a boil over medium heat, then reduce to low heat and cover. Let it simmer for about 20 minutes, stirring occasionally.
  4. Once the rice is cooked and has absorbed most of the almond milk, remove the cinnamon stick.
  5. Stir in honey, vanilla extract, and raisins. Cook for an additional 5 minutes until heated through.
  6. Remove from heat and let it cool slightly. Serve warm or chilled, garnished with chopped almonds and a sprinkle of ground cinnamon.
