- Basmati rice - 100 grams
- Almond milk - 400 ml
- Cinnamon stick - 1 piece
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Raisins - 30 grams
- Chopped almonds - 20 grams
- Ground cinnamon - 1 teaspoon (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, almond milk, cinnamon stick, and a pinch of salt.
- Bring the mixture to a boil over medium heat, then reduce to low heat and cover. Let it simmer for about 20 minutes, stirring occasionally.
- Once the rice is cooked and has absorbed most of the almond milk, remove the cinnamon stick.
- Stir in honey, vanilla extract, and raisins. Cook for an additional 5 minutes until heated through.
- Remove from heat and let it cool slightly. Serve warm or chilled, garnished with chopped almonds and a sprinkle of ground cinnamon.
