Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Cinnamon stick - 1 piece
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Raisins - 50 grams
  • Almonds, slivered - 30 grams
  • Ground cinnamon - 1/2 teaspoon
  • Fresh parsley, chopped - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice, water, cinnamon stick, and salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is tender and the water has been absorbed.
  4. While the rice is cooking, heat the olive oil in a small pan over medium heat. Add the slivered almonds and toast them until golden brown, about 3-4 minutes, stirring frequently.
  5. Remove the toasted almonds from the heat and set aside. In the same pan, add the raisins and ground cinnamon, cooking for an additional 1-2 minutes until the raisins plump up.
  6. Once the rice is cooked, remove it from heat, fluff with a fork, and discard the cinnamon stick. Stir in the toasted almonds, cinnamon-raisin mixture, and chopped parsley.
  7. Serve warm, garnished with additional parsley if desired.
