Ingredients
- Jasmine rice - 150 grams
- Water - 300 milliliters
- Cinnamon stick - 1 piece
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Raisins - 50 grams
- Almonds, slivered - 30 grams
- Ground cinnamon - 1/2 teaspoon
- Fresh parsley, chopped - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice, water, cinnamon stick, and salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is tender and the water has been absorbed.
- While the rice is cooking, heat the olive oil in a small pan over medium heat. Add the slivered almonds and toast them until golden brown, about 3-4 minutes, stirring frequently.
- Remove the toasted almonds from the heat and set aside. In the same pan, add the raisins and ground cinnamon, cooking for an additional 1-2 minutes until the raisins plump up.
- Once the rice is cooked, remove it from heat, fluff with a fork, and discard the cinnamon stick. Stir in the toasted almonds, cinnamon-raisin mixture, and chopped parsley.
- Serve warm, garnished with additional parsley if desired.
