- Basmati rice - 150 grams
- Water - 400 milliliters
- Cinnamon stick - 1
- Ground cinnamon - 1 teaspoon
- Raisins - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Almonds (slivered) - 30 grams
- Fresh parsley (chopped) - 2 tablespoons
- Orange zest - 1 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice, water, cinnamon stick, salt, and ground cinnamon. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
- While the rice is cooking, in a small skillet, heat the olive oil over medium heat. Add the slivered almonds and toast them until golden brown, stirring frequently (about 3-4 minutes).
- Add the raisins to the skillet with the toasted almonds and cook for an additional 2 minutes, just until the raisins are plump.
- Once the rice is done, remove the cinnamon stick and fluff the rice with a fork. Stir in the almond-raisin mixture, fresh parsley, and orange zest.
- Serve warm, garnished with additional parsley if desired.
