Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Cinnamon stick - 1
  • Ground cinnamon - 1 teaspoon
  • Raisins - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Almonds (slivered) - 30 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Orange zest - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice, water, cinnamon stick, salt, and ground cinnamon. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
  4. While the rice is cooking, in a small skillet, heat the olive oil over medium heat. Add the slivered almonds and toast them until golden brown, stirring frequently (about 3-4 minutes).
  5. Add the raisins to the skillet with the toasted almonds and cook for an additional 2 minutes, just until the raisins are plump.
  6. Once the rice is done, remove the cinnamon stick and fluff the rice with a fork. Stir in the almond-raisin mixture, fresh parsley, and orange zest.
  7. Serve warm, garnished with additional parsley if desired.
