Ingredients
- Whole wheat pizza dough - 200 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Spinach - 100 grams, fresh
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 100 grams, crumbled
- Greek yogurt - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 2 large
- Water - 1 liter
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
- Transfer the dough to a baking sheet lined with parchment paper and brush with olive oil.
- In a skillet, heat a little olive oil over medium heat and sauté minced garlic for about 1 minute.
- Add diced red bell pepper and fresh spinach to the skillet, cooking until the spinach wilts, about 3-4 minutes.
- Stir in cumin, paprika, salt, and black pepper, and cook for an additional 2 minutes.
- Spread the sautéed vegetables evenly over the prepared pizza dough.
- Sprinkle crumbled feta cheese over the top of the vegetables.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden brown.
- While the pizza is baking, bring a pot of water to a gentle simmer and poach the eggs for about 3-4 minutes, or until the whites are set.
- Remove the pizza from the oven and let it cool for a minute.
- Top the pizza with spoonfuls of Greek yogurt, fresh parsley, and the poached eggs.
- Slice and serve immediately.
