Ingredients

  • Whole wheat pizza dough - 200 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Greek yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 2 large
  • Water - 1 liter

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the dough to a baking sheet lined with parchment paper and brush with olive oil.
  4. In a skillet, heat a little olive oil over medium heat and sauté minced garlic for about 1 minute.
  5. Add diced red bell pepper and fresh spinach to the skillet, cooking until the spinach wilts, about 3-4 minutes.
  6. Stir in cumin, paprika, salt, and black pepper, and cook for an additional 2 minutes.
  7. Spread the sautéed vegetables evenly over the prepared pizza dough.
  8. Sprinkle crumbled feta cheese over the top of the vegetables.
  9. Bake in the preheated oven for 12-15 minutes or until the crust is golden brown.
  10. While the pizza is baking, bring a pot of water to a gentle simmer and poach the eggs for about 3-4 minutes, or until the whites are set.
  11. Remove the pizza from the oven and let it cool for a minute.
  12. Top the pizza with spoonfuls of Greek yogurt, fresh parsley, and the poached eggs.
  13. Slice and serve immediately.
