Ingredients

  • Greek yogurt - 200 grams
  • Garlic - 1 clove, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 4 large
  • Water - 1 liter
  • Vinegar - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Pita bread - 2 pieces, for serving

Steps

  1. In a bowl, combine the Greek yogurt, minced garlic, paprika, cumin, salt, and black pepper. Mix well and set aside.
  2. In a pot, bring 1 liter of water to a gentle simmer. Add the vinegar to the water.
  3. Crack each egg into a small bowl, then gently slide them into the simmering water one by one. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
  4. While the eggs are poaching, heat the olive oil in a small skillet over medium heat. Once hot, drizzle it over the yogurt mixture to create a swirl effect.
  5. Using a slotted spoon, carefully remove the poached eggs from the water and drain excess water.
  6. To serve, place a generous spoonful of the spiced yogurt on each plate, top with two poached eggs, and sprinkle with chopped parsley. Serve with warm pita bread on the side.
