Ingredients
- Fresh cilantro - 100 grams
- Red lentils - 100 grams
- Carrot - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced carrot, and sauté for about 5 minutes until they start to soften.
- Add the minced garlic, ground cumin, ground coriander, and paprika to the pot. Stir and cook for another 2 minutes until fragrant.
- Rinse the red lentils under cold water and add them to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the lentils are tender.
- Once the lentils are cooked, remove the pot from heat. Add the fresh cilantro and lemon juice, then blend the soup using an immersion blender until smooth, or transfer it to a blender in batches.
- Season with salt and pepper to taste. Serve hot, garnished with additional cilantro if desired.
