Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Fresh cilantro - 30 grams, chopped
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Green onion - 2 stalks, chopped
  • Lemon - 1 medium, juiced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, bring 300 milliliters of water to a boil. Add the rinsed rice, cumin, salt, and black pepper.
  3. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and water is absorbed.
  4. Once cooked, remove from heat and let the rice sit covered for an additional 5 minutes. Then fluff with a fork.
  5. In a large mixing bowl, combine the fluffed rice, chopped cilantro, diced red bell pepper, diced cucumber, halved cherry tomatoes, and chopped green onion.
  6. In a small bowl, whisk together lemon juice and olive oil. Pour over the rice salad and toss gently to combine.
  7. Taste and adjust seasoning if necessary, then serve immediately or refrigerate for an hour to let the flavors meld.
