- Basmati rice - 150 grams
- Water - 300 milliliters
- Fresh cilantro - 30 grams, chopped
- Red bell pepper - 1 medium, diced
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Green onion - 2 stalks, chopped
- Lemon - 1 medium, juiced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, bring 300 milliliters of water to a boil. Add the rinsed rice, cumin, salt, and black pepper.
- Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and water is absorbed.
- Once cooked, remove from heat and let the rice sit covered for an additional 5 minutes. Then fluff with a fork.
- In a large mixing bowl, combine the fluffed rice, chopped cilantro, diced red bell pepper, diced cucumber, halved cherry tomatoes, and chopped green onion.
- In a small bowl, whisk together lemon juice and olive oil. Pour over the rice salad and toss gently to combine.
- Taste and adjust seasoning if necessary, then serve immediately or refrigerate for an hour to let the flavors meld.
