Ingredients

  • Quinoa - 100g
  • Water - 250ml
  • Chickpeas (cooked) - 100g
  • Fresh cilantro (chopped) - 30g
  • Red onion (finely chopped) - 50g
  • Garlic (minced) - 2 cloves
  • Ground cumin - 1 tsp
  • Ground coriander - 1 tsp
  • Paprika - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Flour (whole wheat or chickpea) - 30g
  • Olive oil - for cooking
  • Burger buns - 2
  • Lettuce leaves - for serving
  • Tomato slices - for serving
  • Avocado slices - for serving

Steps

  1. Rinse the quinoa under cold water, then combine it with 250ml of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and quinoa is fluffy.
  2. In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  3. Add the cooked quinoa, chopped cilantro, red onion, minced garlic, cumin, coriander, paprika, salt, black pepper, and flour to the bowl. Mix well until all ingredients are combined.
  4. Form the mixture into 2 patties, ensuring they hold together well. If they are too crumbly, add a little more flour.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  6. Toast the burger buns lightly in the skillet or oven.
  7. Assemble the burgers by placing a patty on each bun, followed by lettuce, tomato slices, and avocado slices. Serve immediately.
