- Quinoa - 100g
- Water - 250ml
- Chickpeas (cooked) - 100g
- Fresh cilantro (chopped) - 30g
- Red onion (finely chopped) - 50g
- Garlic (minced) - 2 cloves
- Ground cumin - 1 tsp
- Ground coriander - 1 tsp
- Paprika - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Flour (whole wheat or chickpea) - 30g
- Olive oil - for cooking
- Burger buns - 2
- Lettuce leaves - for serving
- Tomato slices - for serving
- Avocado slices - for serving
Steps
- Rinse the quinoa under cold water, then combine it with 250ml of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and quinoa is fluffy.
- In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, chopped cilantro, red onion, minced garlic, cumin, coriander, paprika, salt, black pepper, and flour to the bowl. Mix well until all ingredients are combined.
- Form the mixture into 2 patties, ensuring they hold together well. If they are too crumbly, add a little more flour.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- Toast the burger buns lightly in the skillet or oven.
- Assemble the burgers by placing a patty on each bun, followed by lettuce, tomato slices, and avocado slices. Serve immediately.
