Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 30 milliliters
  • Olive oil - 15 milliliters
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and the water is absorbed.
  4. While the rice is cooking, prepare the cilantro lime dressing. In a small bowl, combine the lime juice, olive oil, minced garlic, black pepper, and chopped cilantro.
  5. Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  6. Stir in the cilantro lime dressing into the fluffy rice until well combined.
