Ingredients
- Basmati rice - 150 grams
- Water - 300 milliliters
- Fresh cilantro - 30 grams, chopped
- Lime juice - 30 milliliters
- Olive oil - 15 milliliters
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the cilantro lime dressing. In a small bowl, combine the lime juice, olive oil, minced garlic, black pepper, and chopped cilantro.
- Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Stir in the cilantro lime dressing into the fluffy rice until well combined.
