- Lime juice - 30 ml (about 1 lime)
- Olive oil - 2 tablespoons (30 ml)
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red chili flakes - 1/2 teaspoon (optional)
- Lime wedges - for serving
Steps
- In a bowl, combine chopped cilantro, lime juice, olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and red chili flakes (if using) to create the marinade.
- Cut the chicken breast into even pieces and add them to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve with lime wedges on the side.
