Ingredients

  • Quinoa - 1 cup (185g)
  • Water - 2 cups (480ml)
  • Fresh cilantro - 1/2 cup, chopped (15g)
  • Lemon juice - 2 tablespoons (30ml)
  • Lemon zest - 1 teaspoon (5g)
  • Olive oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon (2g)
  • Paprika - 1 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Cherry tomatoes - 1/2 cup, halved (75g)
  • Cucumber - 1/2 cup, diced (75g)

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer until the water runs clear.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.
  4. In a large bowl, combine the chopped cilantro, lemon juice, lemon zest, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper. Mix well to create the dressing.
  5. Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the bowl with the dressing.
  6. Add the halved cherry tomatoes and diced cucumber to the quinoa mixture, stirring gently to combine all ingredients.
  7. Taste and adjust seasoning if necessary. Serve warm or at room temperature.
