  • Pizza dough - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Cilantro - 50 grams, chopped
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Chickpeas - 100 grams, cooked
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegan cheese - 100 grams (optional)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough to a baking sheet lined with parchment paper.
  4. In a small bowl, mix the olive oil, minced garlic, lemon juice, lemon zest, cumin, paprika, salt, and black pepper.
  5. Brush the garlic-lemon mixture evenly over the pizza dough.
  6. Sprinkle the chopped cilantro over the base, followed by the halved cherry tomatoes, sliced red onion, and cooked chickpeas.
  7. If using, sprinkle the vegan cheese on top of the vegetables.
