Ingredients

  • Chicken thighs - 400 grams
  • Fresh cilantro - 30 grams, chopped
  • Lemon juice - 60 ml (about 1 large lemon)
  • Olive oil - 30 ml
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon zest - 1 teaspoon

Steps

  1. In a bowl, combine chopped cilantro, lemon juice, olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and lemon zest to create the marinade.
  2. Add the chicken thighs to the bowl, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade, letting excess marinade drip off. Discard the marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely charred.
