Ingredients

  • Cauliflower - 300g
  • Chickpea flour - 100g
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100g
  • Bell pepper - 1 small, sliced
  • Red onion - 1/2 small, thinly sliced
  • Olives - 50g, sliced
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Remove the cauliflower leaves and stem, and chop it into florets. Steam the florets for about 5-7 minutes until tender.
  3. In a food processor, blend the steamed cauliflower until it reaches a rice-like texture.
  4. Transfer the cauliflower to a clean kitchen towel and squeeze out excess moisture.
  5. In a mixing bowl, combine the cauliflower, chickpea flour, nutritional yeast, olive oil, lemon juice, garlic powder, cumin, paprika, salt, and black pepper. Mix until a dough forms.
  6. Spread the cauliflower dough onto a parchment-lined baking sheet into a circular pizza shape, about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 20 minutes until golden and firm.
  8. Remove the crust from the oven and spread the tomato sauce evenly on top.
  9. Top the pizza with sliced bell pepper, red onion, and olives.
  10. Return the pizza to the oven and bake for an additional 10 minutes.
