- Cauliflower - 300g
- Chickpea flour - 100g
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 100g
- Bell pepper - 1 small, sliced
- Red onion - 1/2 small, thinly sliced
- Olives - 50g, sliced
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (390°F).
- Remove the cauliflower leaves and stem, and chop it into florets. Steam the florets for about 5-7 minutes until tender.
- In a food processor, blend the steamed cauliflower until it reaches a rice-like texture.
- Transfer the cauliflower to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the cauliflower, chickpea flour, nutritional yeast, olive oil, lemon juice, garlic powder, cumin, paprika, salt, and black pepper. Mix until a dough forms.
- Spread the cauliflower dough onto a parchment-lined baking sheet into a circular pizza shape, about 1/2 inch thick.
- Bake the crust in the preheated oven for 20 minutes until golden and firm.
- Remove the crust from the oven and spread the tomato sauce evenly on top.
- Top the pizza with sliced bell pepper, red onion, and olives.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Once cooked, remove from the oven and sprinkle fresh cilantro on top before slicing and serving.
