Ingredients

  • Baby potatoes - 500 grams
  • Fresh cilantro - 30 grams
  • Garlic - 4 cloves
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the baby potatoes thoroughly and cut them in half.
  3. In a large bowl, mix the olive oil, lemon juice, cumin powder, smoked paprika, salt, and black pepper to create a marinade.
  4. Add the halved potatoes to the marinade and toss until they are well coated.
  5. Spread the potatoes evenly on a baking sheet lined with parchment paper.
  6. Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and tender.
  7. While the potatoes are roasting, prepare the cilantro-garlic dressing by blending the fresh cilantro, garlic, and a pinch of salt in a food processor until finely chopped.
  8. Once the potatoes are done, remove them from the oven and drizzle the cilantro-garlic dressing over the top.
  9. Toss gently to combine and serve warm.
