- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Wash the baby potatoes thoroughly and cut them in half.
- In a large bowl, mix the olive oil, lemon juice, cumin powder, smoked paprika, salt, and black pepper to create a marinade.
- Add the halved potatoes to the marinade and toss until they are well coated.
- Spread the potatoes evenly on a baking sheet lined with parchment paper.
- Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and tender.
- While the potatoes are roasting, prepare the cilantro-garlic dressing by blending the fresh cilantro, garlic, and a pinch of salt in a food processor until finely chopped.
